Jamie’s Tasting Notes: This Chardonnay is grown high in the Adelaide Hills on our Kenton Valley Estate. It’s a bright, youthful wine with aromas of fresh green apple, homemade lemon curd and subtle hints of almond meal. As the wine opens, the acidity softens, revealing the creamy texture you’d expect from a quality, unoaked Chardonnay.
Josh’s Winemaker’s Notes: This is the entry point for Chardonnay in the brand, pure clean varietal expression. The wine that is made to be enjoyed when young and vibrant, it has a lovely line acidity which makes for a refreshing drink. Think summer afternoon with a seafood platter by the beach. Technical Stuff: The grapes were selectively machine picked in the cool of night to preserve the delicate flavour profile of lemon and lime. Membrane pressed where the freerun juice and pressings are kept separate for settling, juice cold settled for 48hours, wine is then racked off of the heaviest solids leaving the fluffy lees in the juice for texture. The juice is then inoculated with a chardonnay specific yeast and allowed to ferment cool at 16 C, this fermentation is done slowly to allow full development of the flavour profile. Once fermented to sugar dryness the wine is then held on lees for about 6 months to build more texture and flavour. 100% Stainless Steel storage, bottled in October 2025.
